Homemade Coleslaw with Apple Slices

Serves 4


2 cups red cabbage, shredded
2 cups green cabbage, shredded
1/4 cup sour cream
1/2 cup mayonnaise
2 Tbsp. cider vinegar
1/2 tsp. celery seed
1/2 tsp. kosher salt
1/8 tsp. black pepper
1 large Gala apple, unpeeled,cored, quartered, and sliced thin
for garnish fresh flat-leaf parsley, finely chopped


  1. Combine the red and green cabbages in a large bowl then set aside.
  2. Place sour cream, mayonnaise, vinegar, celery seed, salt and black pepper in a medium bowl then whisk until ingredients are combined.
  3. Add apple slices to bowl. Pour sour cream mixture over the cabbage then lightly toss to coat.
  4. Cover with plastic wrap then chill for 1 hour before serving. Spoon into salad bowls then sprinkle with parsley.
