Healthy Grown-up Macaroni and Cheese

Serves 8


1 cup Gouda cheese, (shredded)
3 cups milk
1 1/4 cups cornflake cereal, (crushed)
3 oz cream cheese, (softened)
1 lb corkscrew pasta
1/2 cup Cheddar cheese, (shredded)
8 oz ham, (chopped)
3 tablespoons butter
1/4 cup flour
12 oz evaporated milk
1/2 teaspoon salt
1/4 teaspoon ground red pepper
Vegetable cooking spray


  1. Preheat oven to 350° F.
  2. Cook corkscrew pasta until tender.
  3. Turn stove top to medium heat, melt 2 tablespoons of butter inside a Dutch oven. Add in flour, whisk thoroughly. Pour in evaporated milk and milk to Dutch oven. Whisk all ingredients together until thickened. Add salt, Cheddar, red pepper, Gouda and cream cheese, mix together.
  4. Take Dutch oven off stove and add in pasta and ham. Stir together thoroughly.
  5. Coat the inside of a large cooking dish with vegetable cooking spray. Pour Dutch oven ingredients into the baking dish. Melted remaining butter, pour onto pasta mixture and top with corn flakes.
  6. Bake for 30 minutes. Top should become golden brown.
