Spiced Pumpkin Pie Crepes

Serves 6


For filling:
1/8 teaspoon salt
1/4 teaspoon ground cinnamon
1/3 cup evaporated milk
1 cup pumpkin puree
1/4 teaspoon pumpkin pie spice
1/4 cup brown sugar
1/4 teaspoon ground ginger


  1. Heat saucepan to medium heat.
  2. Pour in evaporated milk, salt, ground cinnamon, pumpkin puree, pumpkin spice, brown sugar and ground ginger. Cook for 5-6 minutes, stir occasionally. Remove from heat.
  3. Spoon a tablespoon of filling onto one crepe. Top with a dollop of whipped cream.
  4. Fold in edges and roll closed. Repeat for remaining crepes.
  5. Garnish crepes with powdered sugar, ground cinnamon and whipped cream.
