Tasty Chickpea, Avocado and Feta Salad
Healthy, delicious and super easy to prepare.
Serves 2 |
|2 tablespoons green onions, (sliced thin) |
| Salt, (to taste) |
|1/3 cup feta cheese |
|1 can chickpeas, (rinsed and drained) |
|1/3 cup chopped parsley |
|3 tablespoons fresh lime juice |
| Ground black pepper, (to taste) |
|2 avocados, (sliced) |
- Combine green onions, chickpeas, parsley and lime juice in a mixing bowl. Stir together.
- Add feta cheese and avocado slices. Stir together gently. (Try not to mash avocado)
- Sprinkle salt and pepper over salad and gently toss.
