Banana Oat Chocolate Chip Muffins

Serves 12


2 cups rolled oats
1/2 baking soda
1/4 cup brown sugar
2 bananas
1/2 cup chocolate chips
1 1/2 teaspoons baking powder
1 cup plain Greek yogurt
2 eggs


  1. Preheat oven to 400° F. Line a muffin pan with paper liners.
  2. Combine rolled oats, baking soda, brown sugar, bananas, baking powder, Greek yogurt and eggs in a food processor. Mix on high until batter is smooth. After smooth, add chocolate chips and stir together.
  3. Spoon batter in muffin tins. Fill to 3/4 full.
  4. Place pan in oven and bake for 15-20 minutes. Remove from oven and let cool for 10 minutes before serving.
