Toasted Turkey and Tomato Panini

Serves 1 sandwich

Ingredients:

1/2 tablespoon grated Parmesan cheese
1/2 tablespoon Greek yogurt
2 slices bread, (your preference)
1/2 tablespoon mayonnaise
1 roma tomato, (sliced)
Salt, (to taste)
2 oz deli turkey
2 tablespoons fresh lemon juice
1 tablespoon chopped basil
Ground black pepper, (to taste)

Directions:

  1. Combine Parmesan cheese, Greek yogurt, mayo, lemon juice and basil. Season with salt and pepper. Stir together until well incorporated.
  2. Evenly spread mixture on one side of each slice of bread. Arrange deli turkey and tomato slices on top of mixture. Place second slice of bread on top to complete sandwich.
  3. Place sandwich in Panini press and cook for 3 minutes, until golden brown.
  4. Cut sandwich in half and enjoy.
