Chocolate Oatmeal Cookie Sandwiches
One of the easiest cookies sandwiches you'll ever make.

|1 stick unsalted butter, melted |
|1 cup rolled oats, finely chopped |
|1 cup sugar |
|1/2 teaspoon salt |
|1 egg |
|1 teaspoon vanilla extract |
|1 teaspoon orange juice |
|6 oz semisweet or bittersweet chocolate, melted and cooled |
- Set the racks in the upper and lower thirds of the oven and preheat to 350° F. Grease a baking sheet with cooking spray.
- Pour the melted butter into a bowl. Stir in rolled oats, sugar, salt, egg, vanilla extract and orange juice. Stir until smooth.
- Use a 1/2 teaspoon measure to drop the batter on the prepared baking sheets. Space the cookies about 3 inches apart in all directions, to allow room for them to spread. Bake the cookies for about 8 - 10 minutes. Remove sheets from oven and allow cookies to cool.
- When the cookies are completely cool, arrange half of them bottom side up on a pan. Use a small offset spatula to spread about 1/2 teaspoon of chocolate on each inverted cookie. Top with another cookie, bottom to bottom to create cookie sandwich.
