Green Beans Sauteed with Bacon
A deliciously simple holiday side dish.
Serves 6 |
|1 3/4 lb fresh green beans, trimmed |
|1/4 cup water |
|8 slices bacon, chopped |
|5 green onions, chopped, white bottoms and light green tops only |
|1/2 teaspoon salt |
|1/2 teaspoon pepper |
- Place green beans and water in a large microwave-safe bowl. Cover with plastic wrap and pierce wrap with a fork. Microwave on high for 4-7 minutes or until crisp-tender, then plunge green beans into ice water to stop the cooking process. Drain well. Set aside.
- In a large nonstick skillet over medium heat, cook chopped bacon until crisp. Remove the bacon and drain on paper towels, reserving 2 tablespoons of the drippings in a small bowl. Discard remaining drippings and carefully wipe the skillet clean with a paper towel.
- Sauteed green onions in skillet in hot reserved drippings over medium-high heat for 1 minute. Add green beans, salt and pepper and sauteed for 2-3 minutes or until heated through. Stir in bacon.
