Roasted Red Potatoes with Bacon, Dill and Parsley
Simple, savory and oh so satisfying.
Serves 6 |
|6 bacon slices, chopped |
|2 lb red potatoes, quartered |
|2 tablespoons chopped fresh parsley |
|2 tablespoons chopped fresh dill |
|2 tablespoons butter |
| Salt, to taste |
| Pepper, to taste |
- Preheat oven to 400° F.
- Place a large roasting pan on top of the stove and heat to medium-high heat. Add bacon and cook for 3-5 minutes (until pieces start to render their fat). Add potatoes and stir to coat, then season with salt and pepper.
- Transfer pan to oven, and roast, stirring occasionally until potatoes turn golden brown and tender, and bacon gets crispy.
- Remove from oven and toss with parsley, dill and butter.
