Roasted Red Potatoes with Bacon, Dill and Parsley

Serves 6


6 bacon slices, chopped
2 lb red potatoes, quartered
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
2 tablespoons butter
Salt, to taste
Pepper, to taste


  1. Preheat oven to 400° F.
  2. Place a large roasting pan on top of the stove and heat to medium-high heat. Add bacon and cook for 3-5 minutes (until pieces start to render their fat). Add potatoes and stir to coat, then season with salt and pepper.
  3. Transfer pan to oven, and roast, stirring occasionally until potatoes turn golden brown and tender, and bacon gets crispy.
  4. Remove from oven and toss with parsley, dill and butter.
