Herb-Roasted Chicken Leg Quarters

Serves 4


8 chicken leg quarters
2 tablespoons butter, melted
1 teaspoon garlic pepper seasoning
1 teaspoon oregano leaves
3 teaspoons fresh rosemary, finely chopped
1 1/4 teaspoons fresh thyme leaves


  1. Preheat oven to 425° F.
  2. Line a broiler pan with foil.
  3. Spray broiler pan rack with nonstick cooking spray.
  4. Lay chicken on rack.
  5. In a bowl, combine butter, garlic pepper, oregano, rosemary and thyme.
  6. Rub butter mixture all over chicken pieces.
  7. Roast chicken for 35 to 40 minutes.
