Braised Mock Tender Roast

Serves 8


3 lb mock tender roast
4 carrots, sliced
1 onion, peeled and sliced
4 cloves garlic, sliced
3 celery stalks, sliced
1 bay leaf
1 cup water
2 cups beef stock
Sea salt, to taste
Fresh ground black pepper, to taste


  1. Preheat oven to 275° F.
  2. Bring a Dutch oven. to medium heat. Once hot, add mock tender roast and brown on all sides. Remove from Dutch oven, set aside in a bowl. Season roast with salt and pepper.
  3. Place carrots, onion and celery to Dutch oven. Saute vegetables for 2 minutes. Add garlic to pan and saute for an and additional 2 minutes.
  4. Place mock tender roast on top of vegetables. Pour in water and beef stock. Place bay leaf on top. Place lid on top and place Dutch oven in the oven. Cook for 90 minutes.
  5. Remove Dutch oven, transfer mock tender roast to carving board. Let roast sit for about 10 minutes before serving.
