Toasted Corn Salad

Serves 4


1 tablespoon olive oil
2 tablespoons lime juice
1/4 teaspoon hot sauce
1 teaspoon bottled minced garlic
1/4 teaspoon salt
1 cup fresh corn
1/2 cup diced red bell pepper
1/2 cup diced red onion
1 cup halved cherry tomatoes
1 teaspoon fresh oregano


  1. In a small bowl, whisk together olive oil, lime juice, hot sauce, garlic and salt; set aside.
  2. In a dry skillet, toast corn for about 2 minutes, stirring frequently until golden. Place corn in a medium size bowl.
  3. Add pepper, onion, tomatoes and oregano; toss to combine.
  4. Add in olive oil-lime mixture; stir to combine. Let stand for five minutes before serving.
