Toasted Corn Salad
The best side dish for picnics and BBQ's.
Serves 4 |
|1 tablespoon olive oil |
|2 tablespoons lime juice |
|1/4 teaspoon hot sauce |
|1 teaspoon bottled minced garlic |
|1/4 teaspoon salt |
|1 cup fresh corn |
|1/2 cup diced red bell pepper |
|1/2 cup diced red onion |
|1 cup halved cherry tomatoes |
|1 teaspoon fresh oregano |
- In a small bowl, whisk together olive oil, lime juice, hot sauce, garlic and salt; set aside.
- In a dry skillet, toast corn for about 2 minutes, stirring frequently until golden. Place corn in a medium size bowl.
- Add pepper, onion, tomatoes and oregano; toss to combine.
- Add in olive oil-lime mixture; stir to combine. Let stand for five minutes before serving.
