Tropical Chicken Salad

Serves 2


3 cups chopped cooked chicken
3/4 cup chopped celery
3/4 cup seedless grape halves
3/4 cup coarsely chopped macadamia nuts
Lettuce, your preference
Strawberries, for garnish
Kiwi, for garnish
Avocado, for garnish
Toasted coconut, for garnish
For Dressing:
1/2 cup cream of coconut
1/3 cup red wine vinegar
1 teaspoon dry mustard
1 teaspoon salt
1 clove garlic
1 cup vegetable oil


  1. In blender or food processor, combine all ingredients except oil. On low speed, slowly add oil, blending until smooth.
  2. In large bowl, combine chicken, celery, grapes, nuts and dressing.
  3. Cover; chill to blend flavors. Serve on lettuce with strawberries, kiwi and avocado slices, as desired; sprinkle with coconut.
