Beef and Roasted Red Pepper Crostini

Serves 36


3/4 lb thinly sliced deli roast beef
3 tablespoons olive oil
2 cloves garlic, crushed
2 loaves French bread, cut into thin slices
1 jar roasted red peppers, rinsed, drained, chopped, 12 oz.
2 cups shredded Italian cheese blend


  1. Heat oven to 450° F.
  2. In 1-cup glass measure, combine oil and garlic; microwave on high 30 seconds. Lightly brush top side of each bread slice with oil mixture. Arrange slices on 2 baking sheets.
  3. Bake for 6-8 minutes, until bread is a light golden brown.
  4. Layer equal amounts of beef, red peppers and cheese over toasted bread. Return to oven and bake for an additional 2-4 minutes, until cheese is melted.
