Spiced Honey Chicken

Serves 6


1 tablespoon olive oil
1 yellow onion, sliced
2 cloves garlic, minced
2 lb boneless, skinless chicken thighs, trimmed
3/4 teaspoon ground ginger
1 1/2 teaspoons ground cinnamon
2 tablespoons honey
2 tablespoons lemon juice
1 tablespoon red wine vinegar
2/3 cup chicken stock
1/3 cup raisins
1/3 cup pine nuts


  1. Season the chicken with salt, pepper, 1/4 teaspoon ginger and 1/2 teaspoon cinnamon. Set aside to come to room temperature.
  2. Heat the olive oil in a deep pan and saute the onion and garlic over medium-low heat until soft, but not colored.
  3. Add the chicken and brown. Stir in the remaining ginger and cinnamon and cook for one minute.
  4. Whisk together the honey, lemon juice, vinegar and stock and pour over the chicken. Cover and cook very slowly for about 45 minutes.
  5. Uncover and turn the heat up and boil down the liquid until thick and syrupy, about 5 minutes. Add raisins & pine nuts and enjoy!
