Tropical Banana Nut Bread

Serves 6


1/2 cup sugar
3/4 cup oil
4 eggs
2 1/2 cups flour
1/2 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 package instant vanilla pudding
3 cups mashed ripe banana
1 cup macadamia nuts
3/4 cup shredded coconut


  1. Preheat oven to 350° F. Grease 3 loaf pans with cooking spray.
  2. Combine oil, sugar and eggs in a mixing bowl.
  3. Sift in flour, baking powder, baking soda, salt and pudding. Blend in bananas. Gently fold in macadamia nuts and shredded coconut.
  4. Pour batter into loaf pans. Place in oven and bake for 1 hour.
