Tropical Banana Nut Bread
Banana bread with a tropical twist.

|1/2 cup sugar |
|3/4 cup oil |
|4 eggs |
|2 1/2 cups flour |
|1/2 teaspoon baking powder |
|2 teaspoons baking soda |
|1 teaspoon salt |
|1 package instant vanilla pudding |
|3 cups mashed ripe banana |
|1 cup macadamia nuts |
|3/4 cup shredded coconut |
- Preheat oven to 350° F. Grease 3 loaf pans with cooking spray.
- Combine oil, sugar and eggs in a mixing bowl.
- Sift in flour, baking powder, baking soda, salt and pudding. Blend in bananas. Gently fold in macadamia nuts and shredded coconut.
- Pour batter into loaf pans. Place in oven and bake for 1 hour.
