Oven Roasted Red Potatoes

Serves 8


8 red potatoes, quartered
4 tablespoons extra virgin olive oil
1 teaspoon salt
1 teaspoon ground black pepper
3 cloves garlic, finely minced
2 teaspoons dried rosemary


  1. Preheat oven to 350° F. Line a baking sheet with aluminum foil. Grease foil with cooking spray.
  2. Place potatoes in a mixing bowl. Drizzle olive oil over potatoes and add salt, pepper, minced garlic and rosemary. Toss potatoes until evenly coated.
  3. Transfer seasoned potatoes to the baking sheet. Place in oven to roast for about 30minutes.
