Blueberry Pie

Makes 1 pie

Ingredients:

1 quart fresh blueberries
4 Tbsp. whole-wheat flour
3/4 cup date sugaror substitute granulated sugar
1 Tbsp. sorghum or substitute light corn syrup
1/2 tsp. cinnamon
3 Tbsp. coconut, flaked

Directions:

  1. In a large bowl, mix blueberries, flour, sugar, sorghum and cinnamon. Pour into unbaked pie shell and bake at 350 degrees for 40 to 45 minutes. Garnish with coconut.
