BBQ Pork Spare Ribs with Sauce

Serves 4


BBQ Seasoning:
4 oz. paprika
1 tsp. onion powder
2 oz. white sugar
1 4 lb. slab pork spare ribs
BBQ Sauce:
16 oz. ketchup
3 oz. brown sugar
3 oz. white sugar
2 tsp. onion powder
2 tsp. dry mustard powder
2 oz. BBQ seasoning
2 tsp. black pepper, freshly ground
1 oz. Worcestershire sauce
1 oz. freshly squeezed lemon juice
1 oz. light corn syrup
4 oz. apple cider vinegar
8 oz. water


  1. To prepare BBQ seasoning, mix paprika, onion powder, and white sugar together; set aside.
  2. Prepare pork by placing slab on a clean chopping board; pull off membrane. Season both sides of slab with some of the BBQ seasoning, making sure to reserve 2 ounces of the BBQ seasoning for the BBQ sauce. Refrigerate pork for at least 24 hours.
  3. To prepare BBQ sauce, place all ingredients (from ketchup through water) in a Dutch oven set over high heat. Bring sauce ingredients to a boil, stirring often to prevent sticking. Once sauce begins to boil reduce temperature to low and simmer, uncovered, for 2 hours.
