Lemon Parmesan Asparagus
Prepare this dish any time! It's easy to prepare, with just a few ingredients.
Serves 6 |
|1 lb. asparagus, (rinsed, discard bottoms) |
|2 tablespoons Extra-virgin olive oil |
|1 teaspoon lemon zest |
|2 tablespoons parmesan cheese, (freshly grated) |
| Salt, (to taste) |
| Ground black pepper, (to taste) |
- Cut asparagus into 2" sections, slicing at a diagonal.
- Bring a pot of water to a boil. Add asparagus then reduce heat to a simmer. Cook asparagus for 2 minutes then drain.
- Place hot asparagus in a bowl; drizzle with olive oil then add lemon zest and Parmesan cheese. Stir ingredients to combine. Season with salt and pepper then serve.
