Creamy Greek Yogurt Macaroni Salad
A lighter and tastier version of this classic dish.
Serves 6 |
|4 radishes, (quartered, sliced thin) |
| Salt, (to taste) |
|1/2 lb elbow macaroni |
|1 tablespoon mayonnaise |
|2 tablespoons dill pickle, (finely chopped) |
|2 hard boiled eggs, (egg whites chopped, yolk left whole) |
|2 celery stalks, (sliced thin) |
|1 cup Greek yogurt, (plain) |
| Ground black pepper, (to taste) |
- Cook macaroni according to directions. Drain water and return pasta to pot.
- Mash 1 egg yolk with fork in a mixing bowl. Add lemon juice, Greek yogurt and mayonnaise to bowl. Stir ingredients together until smooth.
- Add egg mixture to pasta, stir together. Add celery, egg whites, dill pickle and radishes to pasta. Stir together. Season with salt and pepper and enjoy!
