Easy Chicken Tortilla Soup

Serves 4

Ingredients:

4 cups chicken stock
1 can tomatoes with juice, (diced)
2 tablespoons lime juice
1 can green chiles, (un-drained)
2 tablespoons cilantro leaves, (chopped)
1 carrot, (rinsed, dried and diced)
2 green onions, (rinsed, dried and chopped - green parts only)
3/4 cup corn kernels, (drained)
1 cup chicken, (cooked,chopped)
1/2 cup Monterey Jack cheese, (shredded)
Tortilla chips, (for serving)

Directions:

  1. In a large stockpot, simmer chicken stock with tomatoes, lime juice, green chiles, cilantro, carrot, green onions and corn for 45 minutes.
  2. Add cooked chicken about 5 minutes before done.
  3. Serve soup in bowls topped with shredded cheese and crushed tortilla chips.
